In HubSpot you can control the drop down options of a line item properties to show only certain options in various conditions.

Ie. if company is hubspot for line item property colors we support only blue and red, so sales reps should only see those options in that product property dropdown, where as, if company is hapily they can choose blue, red, yellow or green.
